Running under x86_64, there is apparently a binary arithmetic error when you use the Unhealth spell. (Of course, that did allow me to win the game with no real sweat, but that's not the point.) Essentially, applying Unheatlth leaves you with a near-infinite number of hitpoints (more digits than fit in the display). If you use Blood Magic, you may find yourself back at the real max, but the next Undeath will put you back at "SuperUndead" level. Even the annoying ultra paladin and wizard guy with their two little healer men could be safely killed by brute force (once the wizard teleported out of the way).

By the way, is the wizard's "pink" daughter (the one with "spunk") actually killable? I got so annoyed with her healing and blinking that I just left...
